Alfatoxin in Peanuts

Aflatoxin is a toxin produced primarily by a fungus called Aspergillus. 

There are mainly three types of Aspergillus that produce these toxins: 

1) Aspergillus flavus

2) Aspergillus parasiticus

3) Aspergillus nomius

Aflatoxin is named after Aspergillus flavus (this Aspergillus, Flavus toxin is a 

harmful substance).

How is aflatoxin produced in peanuts?

Aflatoxins are produced by spores and soil borne fungi.  It does not affect the 

extract.  As well as its seed growth is seen but no damage is seen to the seed 

from inside.  It is not possible to get 100% seed without aflatoxin.  It spreads 

more as farmers, sellers, consumers are not aware of this.

Planting infected aflatoxin-infected seeds does not germinate, and the seeds 

decompose in the soil itself.  Plants are found in an underdeveloped state. Such 

plants are underdeveloped, with small leaves and thick trunks.  It does not 

have flowers.  This disease is known as aflarot.  Most physically damaged or 

wilted grains are oily mandvi flours that already contain aflatoxin-affected 

grains, other mandvi products, unfiltered mandvi oil aflatoxin.
